- 1 can whole corn
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 eggs, beaten
- 1 c. grated Cheddar cheese
- 1 pkg. jalapeno cornbread mix
- 1 small jar pimento dices
- 2/3 c. milk or 1/2 c. water
- 1 stick oleo
Directions

1Saute onion and bell pepper in oleo.

2Add rest of ingredients. Bake at 350° for 35 to 40 minutes or until set good in the middle. Stick a knife in middle to see if it is done; knife will come out clean.
