- 1 (15 oz.) can whole grain corn
- 1 (15 oz.) can cream-style corn
- 2 beaten eggs
- 1 pkg. Jiffy corn muffin mix
- 1 onion, chopped
- 1 tsp. chopped green pepper
- 16 oz. sour cream
- 1 stick margarine
- 2 c. grated cheese
- salt and pepper
Directions

1Saute onions and green pepper in margarine.

2Fold corn into beaten eggs.

3Add Jiffy corn muffin mix to egg and corn mixture. Add onions and green pepper.

4Pour into well-greased 9 x 13-inch baking dish.

5Spread with sour cream.

6Then top with grated cheese.

7Bake at 375° for 40 minutes.

8After removing from oven, cover for a few minutes before serving.
