Deep Fried Onion Rings

Ingredients
- 2 medium onions
- 1 slightly beaten egg
- 1 c. milk
- cooking oil for deep fat frying
- 3 Tbsp. cooking oil
- 1 c. plus 2 Tbsp. flour
- 1/2 tsp. salt
Directions

1Peel and cut onions into 1/2-inch thick slices.

2Separate into rings and set aside.

3In a medium bowl, combine beaten egg, milk and oil.

4Blend in flour and salt just until moistened.

5Fill deep fat fryer or a 2 to 3-quart saucepan with cooking oil.

6Heat oil to 375°.

7Using a fork, dip onion rings, one at a time, in batter to cover.

8Let excess drip back into bowl.

9Working quickly, place each ring in the hot oil.

10Fry rings, a few at a time, about 2 to 3 minutes, or until golden brown, turning once with a fork to separate rings.

11Remove from oil.

12Great batter to fry okra or squash also.
