- 1 stick oleo
- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 1/4 c. evaporated milk
- 3 eggs, beaten
- 2 cans cream corn
- 2 cans whole kernel corn
- 1 Tbsp. sugar
- 1 1/2 c. Minute rice or cooked rice
- 1 lb. Velveeta cheese or Monterey Jack cheese
- bacon bits
Directions

1Saute in skillet the oleo, onion and bell pepper.

2Mix remaining ingredients in large bowl; mix together with sauteed ingredients.

3Top with Velveeta cheese or Monterey Jack cheese. Top with bacon bits.

4Bake for 30 minutes at 350°.
