  • 1 stick oleo
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1/4 c. evaporated milk
  • 3 eggs, beaten
  • 2 cans cream corn
  • 2 cans whole kernel corn
  • 1 Tbsp. sugar
  • 1 1/2 c. Minute rice or cooked rice
  • 1 lb. Velveeta cheese or Monterey Jack cheese
  • bacon bits

Directions

    Saute in skillet the oleo, onion and bell pepper.

    Mix remaining ingredients in large bowl; mix together with sauteed ingredients.

    Top with Velveeta cheese or Monterey Jack cheese. Top with bacon bits.

    Bake for 30 minutes at 350°.
