- 1 onion, chopped
- 2 chopped bell peppers
- 1/2 c. margarine
- 1/4 c. plain flour
- 2 c. whole kernel corn
- 2 c. cooked rice
- 1 (14 1/2 oz.) can diced tomatoes, undrained
- 4 chopped boiled eggs
- 2 1/2 c. shredded cheese (sharp), divided
- 2 Tbsp. Worcestershire sauce
- 2 tsp. hot pepper sauce
- 2 tsp. salt
- 1 tsp. pepper
Directions

1Saute onion and pepper in margarine until tender.

2Stir in flour.

3Remove from heat and add the rest of the ingredients saving 1/2 cup cheese.

4Pour into a greased 2 1/2-quart baking dish.

5Bake 45 minutes in a 350° oven.

6Top with remaining cheese and let stand five minutes.

7Makes 10 to 12 good servings.
