- 2 Tbsp. butter
- chopped onion
- chopped pepper
- 1 c. water
- 1 1/2 c. minute rice
- 2 cans cream of mushroom soup
- 2 cans Mexican corn, drained
- 1 c. grated cheese
Directions

1Cook bell pepper and onion in butter in microwave.

2Add water and bring to a boil.

3Add rice.

4Let sit, covered, for 5 minutes. Add soup and corn.

5Mix well.

6Top with cheese.

7Cook 30 minutes, uncovered, in preheated oven at 350°.
