Corn Casserole

Ingredients

  • 1 c. fresh bread crumbs
  • 2 Tbsp. margarine or butter
  • 1 (1 lb. 1 oz.) can whole kernel corn, well drained
  • 2 eggs
  • 1 can cream of mushroom soup (undiluted)
  • 1/4 c. chopped onion
  • salt and pepper to taste

Directions

    Brown crumbs in butter.

    Add corn, slightly beaten eggs, soup, onion and seasonings.

    Pour into buttered casserole or ring mold. Bake at 350° for about 40 minutes or until firm and pulls away from side of pan.

    If baked in ring mold, turn out on serving plate and serve with cooked Brussels sprouts in center.
