Ingredients

  • 2 cans cream-style corn
  • 1 large onion, chopped
  • 3/4 c. Minute rice, uncooked
  • 1/2 c. bell pepper, chopped
  • 1/2 stick oleo
  • 2 eggs, slightly beaten
  • 1 c. grated cheese (Velveeta)
  • salt and pepper to taste

Directions

    Saute onion and pepper in oleo until tender.

    Mix other ingredients, except cheese, and pour into baking dish.

    Cover and bake at 300° for 45 minutes.

    Sprinkle with cheese immediately after removing from oven.
