- 2 cans cream-style corn
- 1 large onion, chopped
- 3/4 c. Minute rice, uncooked
- 1/2 c. bell pepper, chopped
- 1/2 stick oleo
- 2 eggs, slightly beaten
- 1 c. grated cheese (Velveeta)
- salt and pepper to taste
Directions

1Saute onion and pepper in oleo until tender.

2Mix other ingredients, except cheese, and pour into baking dish.

3Cover and bake at 300° for 45 minutes.

4Sprinkle with cheese immediately after removing from oven.
