  • 1 can creamed corn, drained
  • 1 can whole kernel corn, drained
  • 2 eggs or egg substitute
  • 1/2 c. chopped bell pepper
  • 1/2 c. chopped onion
  • 2 c. cracker crumbs, crushed (nonfat works)
  • 1 1/2 tsp. salt
  • pepper to taste
  • 1/2 stick low-fat oleo

Directions

    Heat milk, oleo and corn until warm.

    Add beaten eggs and rest of ingredients.

    Pour into greased casserole.

    Bake at 350° for 45 minutes.
