- 2 eggs
- 1 (8 oz.) can cream-style corn
- 1 (8 oz.) can whole kernel corn
- 1 c. sour cream
- 1 stick melted butter
- 1 pkg. Jiffy corn muffin mix
- salt and pepper
- 1 c. shredded cheese (optional)
Directions

1Beat eggs slightly; add corn, butter and sour cream.

2Fold in muffin mix, salt and pepper.

3Put in a 2-quart casserole dish and sprinkle cheese on top.

4Bake at 350° for 45 minutes or when toothpick inserted in center comes out clean.
