  • 2 eggs
  • 1 (8 oz.) can cream-style corn
  • 1 (8 oz.) can whole kernel corn
  • 1 c. sour cream
  • 1 stick melted butter
  • 1 pkg. Jiffy corn muffin mix
  • salt and pepper
  • 1 c. shredded cheese (optional)

Directions

    Beat eggs slightly; add corn, butter and sour cream.

    Fold in muffin mix, salt and pepper.

    Put in a 2-quart casserole dish and sprinkle cheese on top.

    Bake at 350° for 45 minutes or when toothpick inserted in center comes out clean.
