  • 1 small onion, chopped fine
  • 1/2 green pepper, chopped fine
  • 1 can whole kernel corn (undrained)
  • 1 can cream-style corn
  • 1 small pkg. Jiffy corn muffin mix
  • 3 beaten eggs
  • 1/2 pt. sour cream
  • grated cheese

Directions

    Saute the onion and green pepper.

    Combine the corns, corn muffin mix and beaten eggs.

    Blend all ingredients, except sour cream and cheese, together in ovenproof baking dish.

    Top with the sour cream and cheese.

    Bake at 350°, uncovered, for about 45 minutes, or until done.
