  • 2 c. whole kernel corn
  • 1/2 c. butter, melted
  • 2 eggs
  • 1 c. sour cream
  • 1 1/2 tsp. salt
  • 1 c. diced Monterey or Cheddar cheese
  • 1/2 c. corn meal
  • 1 (4 oz.) can diced green chilies

    Generously butter 2-quart casserole. Puree 1 cup of corn with butter and eggs in blender. Mix remaining ingredients and blend well. Pour in pan. Bake, uncovered, for 50 to 60 minutes at 350°. May be frozen, but thaw completely before heating up.
