- 1 can drained whole corn
- 1 can cream-style corn
- 2 beaten eggs
- 1 pkg. corn muffin mix
- 1 onion, finely chopped
- 1/2 bell pepper, finely chopped
- 1 stick margarine
- 1 pt. dairy sour cream
- 2 c. grated Cheddar cheese
- salt to taste
Directions

1Saute onion and pepper in margarine.

2Fold corn into beaten eggs.

3Add corn muffin mix to egg mixture, then add onion and pepper.

4Put into a well-greased 9 x 12-inch baking dish.

5Spread with sour cream and cheese.

6Sprinkle with paprika.
