  • 1 (8 1/2 oz.) pkg. cornbread mix
  • 2 1/2 c. milk
  • 1/2 c. vegetable oil
  • 1 small onion, grated
  • 1 (17 oz.) can creamed corn
  • 1 (17 oz.) can whole kernel corn
  • 1 Tbsp. sugar
  • 1/2 tsp. salt
  • 1 (4 oz.) can green chopped chilies
  • 4 eggs, beaten
  • 2 c. grated Cheddar cheese

Directions

    Combine cornbread mix, milk and oil. Mix well. Stir in onion, corn, sugar, salt and chilies. Beat eggs and stir into mixture. Stir in 1 1/2 cups cheese. Pour into greased 13 x 9 pan. Bake at 400° for 25 minutes. Sprinkle remaining cheese on top and continue baking 15 to 20 minutes longer.
