Corn Casserole - Texas Style

  • 2 eggs, slightly beaten
  • 3/4 c. milk
  • 1 c. shredded Cheddar cheese (we like sharp)
  • 1 tsp. sugar
  • 1/2 c. chopped bell pepper and onions
  • 1 (17 oz.) can creamed corn
  • 1 tsp. salt
  • 1/2 c. crushed crackers
  • bacon

Directions

    Combine all ingredients and place in a greased 1-quart casserole.

    Bake at 350° for 60 minutes.

    Crumble bacon on the top with a few extra cracker crumbs the last 15 minutes.
