  • 1 (1 lb.) can whole kernel corn
  • 4 eggs, well beaten
  • 1/2 c. evaporated milk or half and half
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 5 or 6 saltine crackers, crumbled
  • 1 c. shredded Cheddar cheese

Directions

    Drain corn, putting liquid with eggs, milk, salt and pepper. Beat until well mixed.

    Add crackers and cheese.

    Pour into a buttered baking dish.

    Bake in 350° oven for 30 to 40 minutes or until set.
