Ingredients
- 2 Tbsp. vegetable oil
- 1 onion, minced
- 3 cloves garlic, minced
- 1 1/2 Tbsp. chili powder
- 1/8 to 1/4 tsp. cayenne pepper
- 2 tsp. ground cumin seed
- 1 large rib celery, chopped
- 2 peppers, diced
- 12 tomatoes, chopped and skinned
- 2 c. kidney beans
- 2 c. corn (off cob)
- salt
Directions

1In large heavy saucepan heat oil over moderate heat.

2Add onion and garlic.

3Stir to coat, then simmer until onion is softened. Add chili powder, cayenne and cumin.

4Stir to blend.

5Cook for at least 3 minutes, stirring frequently.

6Add celery, peppers and tomatoes.

7Simmer 5 minutes.

8Add beans and corn.

9Simmer 20 minutes.

10Season with salt.
