  • 4 Tbsp. butter
  • 1 onion, chopped (white)
  • 4 c. chicken broth
  • 1 large potato, chopped
  • 4 c. corn (fresh cooked or canned)
  • 1/2 tsp. thyme
  • 1 bay leaf
  • 1 c. cream or half and half
  • 6 Tbsp. butter

Directions

    Saute onion in 4 tablespoons of butter until tender.

    Add corn, potato, chicken broth and herbs.

    Simmer 25 minutes.

    Puree soup in blender.

    Return to pot.

    Add cream, 6 tablespoons of butter, salt and pepper.

    Serve hot.
