- 1 Tbsp. margarine
- 3 c. diced onions
- 3/4 c. crumbs (from unsalted oyster crackers)
- 2 Tbsp. flour
- 2 c. water
- 2 c. chicken, beef or ham broth
- 3 c. diced potatoes
- 2 c. half and half
- 2 c. frozen corn kernels, defrosted
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- salt
- white pepper, freshly ground
Directions

1Saute red and green peppers briefly in a small amount of butter.

2Add salt and pepper to taste.

3Mix liquids, butter, potatoes, onions and cook until done.

4Mix cracker crumbs, flour and seasonings.

5Add to potato and onion mixture.

6Add red and green peppers, mix well.

7Bring to a boil, add cream

8and corn, simmer for 15 to 20 minutes.
