Corn Chowder(Serves 4)

- light cooking spray
- 1 c. onion, chopped
- 6 c. fresh corn kernels or 3 cans creamed corn
- 3 c. chicken stock, fat skimmed off
- 1/2 c. chopped red peppers
- 1/2 tsp. fresh rosemary
- 1/2 tsp. thyme
- 1/8 tsp. black pepper
- cayenne pepper to taste
- 1 Tbsp. fresh basil
Directions

1Preheat large saucepan over medium heat about 1 minute.

2Spray twice with cooking spray.

3Saute the onions until translucent. Add 4 cups of the corn (2 cans) and saute 4 to 5 minutes, until softens a bit.

4Add 2 cups chicken stock and cook until corn can be mashed easily.

5Transfer contents of pan to a blender and puree until smooth.

6Return to saucepan.

7Add pepper, rosemary, thyme, black pepper, cayenne pepper, 1 cup chicken stock and 2 cups corn (1 can).

8Stir and cook 10 minutes more until it thickens. Garnish with the fresh basil.
