- 2 cups diced peeled potatoes
- 1/2 cup chopped onion
- 1-1/2 tsp. salt
- 1/2 tsp. pepper
- 2 cups water
- 4 cups fresh corn
- 2-3/4 cup milk, divided
- 1/4 cup sliced green onions
- 2 tbsp. minced fresh parsley
- 6 hard-cooked eggs, sliced
- 3 cups biscuit mix
Directions

1Place potatoes, onion, salt, pepper and water in a large saucepan.

2Bring to a boil and boil, uncovered, for 5 minutes.

3Add corn.

4Return to boiling and boil for 2 minutes.

5Drain.

6Add 1-3/4 cups milk, green onions and parsley.

7Pour into a grease 13x9x2-inch baking dish.

8Top with eggs.

9Mix biscuit mix and remaining milk until smooth.

10Drop by teaspoonfuls onto corn mixture.

11Bake at 450F for 13 to 15 mintues or until done.
