Ingredients

  • 1 can creamed corn
  • 1 can whole corn (undrained)
  • 3 eggs
  • 1 small onion, chopped
  • 1 (8 1/2 oz.) pkg. corn muffin mix
  • 1 c. sour cream
  • 1 c. grated sharp cheese
  • 1 green pepper, chopped
  • 1 stick margarine

Directions

    Saute onion and green pepper in margarine until soft.

    Mix with eggs and corn muffin mix.
  3. 3
    Mix in corn and pour into greased casserole.

    Mix sour cream and cheese and put on top of corn mixture.

    Bake at 350° for 45 minutes or until knife comes out clean.
