- 2 1/2 c. cornmeal mix
- 1/4 tsp. ground red pepper
- 1/4 tsp. black pepper
- 1/4 c. finely chopped onion
- 2 Tbsp. finely chopped green pepper
- 1 (2 oz.) jar diced pimento, drained
- 1 (8 oz.) can cream-style corn
- 1/2 c. boiling water
- vegetable oil
Directions

1Combine first 7 ingredients in large bowl; stir in boiling water.

2Let stand 10 minutes.

3Pour oil to depth of 1/4-inch in large skillet.

4Using a tablespoon dipped in hot water; drop cornmeal mixture into hot oil.

5Fry over medium heat for 1 minute on each side or until golden brown.

6Drain on paper towels. Yields 24 fritters.
