- 1 tsp. baking powder
- 2 tsp. salt
- 2 eggs
Directions

1Chop corn and drain.

2Mix and sift dry ingredients.

4Separate eggs and beat yolks slightly.

5Add to the corn mixture.

6Beat egg whites until stiff and fold in.

7Drop spoon into hot oil, then into batter.

8Pick up a spoonful of the corn mixture and place in hot oil.

9Cook to a golden brown.
