- 2 1/2 c. cornmeal
- 1/4 tsp. red pepper
- 1/4 tsp. black pepper
- 1/4 c. chopped onion
- 2 Tbsp. chopped green pepper
- 1 (2 oz.) jar diced pimiento, drained
- 1 (8 oz.) cream-style corn
- 1/2 c. boiling water
- vegetable oil
Directions

1Combine first 7 ingredients in a large bowl; stir in boiling water.

2Let stand 10 minutes.

3Pour oil in a depth of 1/2-inch in a large skillet.

4Use a tablespoon dipped in hot water.

5Drop cornmeal mixture into hot oil.

6Fry over medium heat 1 minute on each side or until golden.

7Drain on paper towel.
