  • 1 c. enriched flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 2 eggs
  • 1/4 c. milk
  • 1 Tbsp. melted shortening
  • 1 1/2 c. cooked whole kernel corn
  • fat for deep frying

Directions

    Sift flour, salt and baking powder into bowl.

    Beat eggs with milk.

    Add melted fat and corn; combine the 2 mixtures lightly. Drop from teaspoon into deep fat heated to 365°.

    Fry until brown, about 4 to 5 minutes.

    Drain on absorbent paper.

    Great dipped in syrup.
