- 1/2 cup milk
- 1 egg, beaten
- 8 1/2 ounces Jiffy corn muffin mix

1Empty can of corn into large bowl.

2Rinse empty can with the 1/2 cup milk.

3Add to corn.

4Add beaten egg.

5Add corn muffin mix and stir to combine.

6Heat large skillet with oil to cover bottom.

7Cook like pancakes, turn when edges start to look dry.

8One tablespoon makes a good size fritter.
