  • 1 c. sifted enriched flour
  • 1 tsp. salt
  • 1 tsp. double-acting baking powder
  • 2 eggs
  • 1/4 c. milk
  • 1 Tbsp. melted Crisco
  • 1 1/2 c. cooked whole kernel corn
  • Crisco for shallow frying

Directions

    Combine flour, salt, and baking powder.

    Beat eggs with milk and add melted Crisco and whole kernel corn.

    Combine two mixtures lightly.

    Drop from a tablespoon into shallow Crisco heated to 365°.

    Fry until brown and cooked in center, 4 to 5 minutes. Drain on absorbent paper.

    Serve hot with maple syrup.

    Makes 15 to 20 fritters.
