- vegetable oil
- 1 (12 oz.) can whole kernel corn, drained
- 1 c. pancake mix
Directions

1Put 1-inch vegetable oil in skillet.

2Blend egg and milk.

3Add pancake mix, stirring just until smooth.

4Fold in corn.

5To ensure lightness, do not beat.

6Drop by teaspoonfuls in hot oil at 325°. Cook slowly until golden brown, about 4 minutes.

7Serve as a vegetable or with syrup, if desired.

8Makes approximately 24 fritters.
