Corn Light Bread

Ingredients

  • 1 egg
  • 2 c. self-rising corn meal
  • 2 c. buttermilk
  • 1 c. sugar
  • 1 c. self-rising flour

Directions

    Mix all together and cook in a Bundt of tube pan that has been greased.

    Steam first for 15 or 20 minutes by placing the pan of batter in a large, covered pan with about 1-inch of water.

    (I use a 9 x 13-inch cake pan and cover it with heavy aluminum foil.) Bake at 350° for about 50 minutes or until brown.
