Ingredients

  • 1 whole Onion (small)
  • 1/2 whole Red Bell Pepper
  • 2 stalks Celery
  • 4 Tablespoons Butter
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 1/4 teaspoons Cajun Seasoning
  • 16 ounces, weight Bag Frozen Corn
  • 3 Tablespoons Flour
  • 1 cup Milk

Directions

  1. 1
    1. Slice, dice and chop up your onion, pepper, and celery. If my celery leaves look nice and green, I chop those up and stick them in there too.
  2. 2
    2. In a large skillet, melt your butter over medium heat and then add your chopped vegetables.
  3. 3
    3. Sprinkle on your salt, pepper and Cajun seasoning (about 1/4 teaspoon of each). You can add more later if needed.
  4. 4
    4. Saute your vegetables until the onion is wilted looking, about 7-8 minutes.
  5. 5
    5. Add your bag of corn, stir and cook this another 2 minutes.
  6. 6
    6. Sprinkle your flour over the vegetables and stir this together. It will quickly turn to a thick mixture.
  7. 7
    7. Add your milk and mix this all up.
  8. 8
    8. Taste and add more salt, pepper or Cajun Seasoning if needed. Once thickened you are ready to serve.
