- 7 c. cucumbers, thinly sliced
- 1/2 c. chopped onion
- 1/4 c. green pepper, chopped
- 2 c. sugar
- 1 c. vinegar
- 1 tsp. pickling spice
Directions

1Soak wedge sliced cucumbers in water.

2Add 1 tablespoon of salt to water.

3Set in refrigerator overnight.

4Next day, drain slices.

5Mix onion, green pepper, sugar, vinegar and pickling spice together.

6Put slices of cucumber in canning jars and pour mixture over cucumbers in each jar until covered.

7Cap each jar. Let season in refrigerator for 2 weeks before eating.

8Keep stored in the refrigerator.
