Ingredients
- 1 doz. ears fresh corn
- 1 large onion, chopped
- 1 medium bell pepper, chopped
- 1/4 c. cooking oil
- 2 to 3 pods garlic, minced
- 1 whole tomato, peeled and chopped
- salt
- red and black pepper
- 1/2 c. fresh peeled butter beans (optional)
Directions

1Shuck, silk and rinse corn thoroughly.

2Cut corn from cobs (make one cut if kernels are small, two if large).

3Scrape cob if you like creamy maquechou.

4Place cooking oil in bottom of heavy pot.

5Add all other ingredients and cook slowly on low heat.

6Stir occasionally, until onions are transparent.

7If corn is dry, add a small amount of water to reach desired consistency.

8Season to taste.

9If you like, throw a handful of freshly peeled butter beans into maquechou.
