Corn Maquechou(Serves 4)

Ingredients

  • 1 doz. ears fresh corn
  • 1 large onion, chopped
  • 1 medium bell pepper, chopped
  • 1/4 c. cooking oil
  • 2 to 3 pods garlic, minced
  • 1 whole tomato, peeled and chopped
  • salt
  • red and black pepper
  • 1/2 c. fresh peeled butter beans (optional)

Directions

    Shuck, silk and rinse corn thoroughly.

    Cut corn from cobs (make one cut if kernels are small, two if large).

    Scrape cob if you like creamy maquechou.

    Place cooking oil in bottom of heavy pot.

    Add all other ingredients and cook slowly on low heat.

    Stir occasionally, until onions are transparent.

    If corn is dry, add a small amount of water to reach desired consistency.

    Season to taste.

    If you like, throw a handful of freshly peeled butter beans into maquechou.
