Ingredients
- 3/4 c. flour
- 3/4 c. corn meal
- 3 tsp. baking powder
- 2 Tbsp. sugar
- 3/4 tsp. salt
- 1/4 c. melted shortening
- 1 c. milk
- 1 egg, well beaten
Directions

1Sift flour into mixing bowl.

2Add the next 4 ingredients and re-sift.

3Combine shortening, milk and egg.

4Mix well.

5Pour all at once into center of dry ingredients.

6Stir quickly until dry ingredients are just dampened.

7Then stir 3 or 4 times more. Batter will not be smooth.

8Spoon quickly into greased muffin pans.

9Fill about 2/3 full.

10Bake about 25 minutes in a 425° oven or until golden brown.

11Serve hot with butter.
