  • 2 tablespoons Crisco Butter Flavor All-Vegetable Shortening
  • 3 cups corn kernels fresh or frozen and thawed
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated lime peel finely
  • 1/2 cup queso fresco crumbled

Directions

    HEAT shortening in large skillet over medium heat. Add corn and stir-fry 2 minutes.

    STIR in paprika, salt, cayenne pepper and pepper. Remove from heat. Just before serving stir in cilantro, lime juice and lime peel. Top with cheese.
