- 2 tablespoons Crisco Butter Flavor All-Vegetable Shortening
- 3 cups corn kernels fresh or frozen and thawed
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon pepper
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon fresh lime juice
- 1 teaspoon grated lime peel finely
- 1/2 cup queso fresco crumbled
Directions

1HEAT shortening in large skillet over medium heat. Add corn and stir-fry 2 minutes.

2STIR in paprika, salt, cayenne pepper and pepper. Remove from heat. Just before serving stir in cilantro, lime juice and lime peel. Top with cheese.
