  • 3/4 c. flour
  • 2 tsp. baking powder
  • 3/4 c. corn meal
  • 3/4 c. milk
  • 1/3 c. sugar
  • 1/2 tsp. salt
  • 1 egg
  • 2 Tbsp. oil or melted butter

    Preheat oven to 450°.

    Sift flour, sugar, baking powder and salt together.

    Mix with corn meal.

    Combine egg, oil and milk. Add dry ingredients to egg mixture, mixing just until well blended.

    Do not beat.

    Fill 12 greased muffin cups 2/3 full. Bake for 15 minutes.
