- 1 c. white cornmeal
- 1 c. all-purpose flour
- 1 tsp. salt
- 3 tsp. baking powder
- 2 Tbsp. sugar
- 2 eggs, lightly beaten
- 1 c. milk
- 3 Tbsp. butter, melted
Directions

1Preheat oven to 400°.

2Grease muffin tins that are 1 1/2-inches in diameter. Sift the dry ingredients into a mixing bowl. Combine eggs, milk and melted butter.

3Add to the dry ingredients.

4Mix just until blended.

5Do not overmix. Spoon into greased muffin tins, filling each tin completely full. Bake at 400° for 20 minutes or until done.
