  • 3/4 c. flour
  • 1/3 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. cornmeal
  • 1 egg
  • 2 Tbsp. oil or melted butter
  • 3/4 c. milk

Directions

    Preheat oven to 450°.

    Sift together flour, sugar, baking powder and salt.

    Combine with cornmeal and mix thoroughly.

    In separate bowl, mix egg, oil and milk.

    Add dry ingredients and mix well with large spoon, but do not beat.

    Fill greased muffin cups 2/3 full or pour into an 8 x 8-inch pan.

    Bake for 15 minutes at 450°.
