- 3/4 c. flour
- 1/3 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. cornmeal
- 1 egg
- 2 Tbsp. oil or melted butter
- 3/4 c. milk
Directions

1Preheat oven to 450°.

2Sift together flour, sugar, baking powder and salt.

3Combine with cornmeal and mix thoroughly.

4In separate bowl, mix egg, oil and milk.

5Add dry ingredients and mix well with large spoon, but do not beat.

6Fill greased muffin cups 2/3 full or pour into an 8 x 8-inch pan.

7Bake for 15 minutes at 450°.
