  • 1 c. yellow or white cornmeal
  • 5 Tbsp. sugar
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 1/4 c. milk
  • 1 1/4 c. sifted flour
  • 1 egg
  • 1/4 c. liquid shortening

    Blend liquid ingredients into dry ingredients.

    Do not overmix (takes about 1 minute).

    Bake in greased muffin pan at 425° for about 20 to 25 minutes.
