- 3 tablespoons unbleached flour
- 3 tablespoons yellow cornmeal
- 1 tablespoon sugar
- 3/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1 large egg yolk, beaten
- 2 tablespoons milk
- 2 teaspoons butter, melted
- 1 teaspoon yellow cornmeal
Directions

1In a small bowl stir together flour, 3 T yellow cornmeal, sugar, baking powder and salt.

2Make a well in the center of the dry ingredients.

3Stir together beaten egg yolk, milk and melted butter.

4Add all at once to the dry ingredients, stirring just till moistened.

5Line two 6-ounce custard cups with paper baking cups.

6Fill cups 2/3rds full.

7Sprinkle a little additional cornmeal atop muffins.

8Micro-cook, uncovered, on 100% power about 45 seconds or till done, rearranging once. (When done, the surface may appear moist but a wooden pick inserted near the center should come out clean.).
