- 1 1/2 c. raw corn kernels or cream-style corn
- 1 c. finely crushed saltine crackers
- 1/2 c. low-fat milk
- 2 large eggs
- 1/4 tsp. pepper
- 1 Tbsp. canola oil
Directions

1Mix all ingredients except oil in a medium bowl until well blended.

2Heat half the oil in a large nonstick skillet over medium heat.

3Drop 6 heaping tablespoons corn mixture into skillet.

4Cook 2 minutes; turn with a spatula and cook 2 minutes more until lightly brown.

5Repeat with remaining mixture.

6Serves 4.
