  • 1 1/2 c. raw corn kernels or cream-style corn
  • 1 c. finely crushed saltine crackers
  • 1/2 c. low-fat milk
  • 2 large eggs
  • 1/4 tsp. pepper
  • 1 Tbsp. canola oil

Directions

    Mix all ingredients except oil in a medium bowl until well blended.

    Heat half the oil in a large nonstick skillet over medium heat.

    Drop 6 heaping tablespoons corn mixture into skillet.

    Cook 2 minutes; turn with a spatula and cook 2 minutes more until lightly brown.

    Repeat with remaining mixture.

    Serves 4.
