  • 4 Tbsp. melted oleo
  • 1/2 c. minced onion
  • 1 c. whole kernel corn
  • 1 c. cream-style corn
  • 1/4 c. chopped pimientos
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper
  • 2 c. cooked Minute rice

Directions

    Melt butter in medium skillet.

    Remove 2 tablespoons butter to a small bowl.

    Saute onion in skillet until golden.

    Add both cans of corn, pimientos, salt and pepper; stir in rice.

    Mix well. Pour melted butter across top.

    Bake at 350° for about 20 minutes, or until nicely browned.
