- 4 Tbsp. melted oleo
- 1/2 c. minced onion
- 1 c. whole kernel corn
- 1 c. cream-style corn
- 1/4 c. chopped pimientos
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 2 c. cooked Minute rice
Directions

1Melt butter in medium skillet.

2Remove 2 tablespoons butter to a small bowl.

3Saute onion in skillet until golden.

4Add both cans of corn, pimientos, salt and pepper; stir in rice.

5Mix well. Pour melted butter across top.

6Bake at 350° for about 20 minutes, or until nicely browned.
