- 1/4 c. butter
- 1/4 c. flour
- 2 tsp. salt
- 1/8 tsp. white pepper
- 1 1/2 Tbsp. sugar
- 2 c. milk
- 3 c. fresh corn, cut off the cob and chopped
- 3 eggs
Directions

1Melt the butter; stir in flour, salt, pepper and sugar.

2Cook until bubbly.

3Add milk and cook until thick.

4Stir in the corn and eggs; beat until frothy.

5Pour into a buttered 1 quart casserole dish and bake in a hot water bath at 350° about 45 minutes or until custard is set.

6Or, mix the egg yolks into the corn mixture and beat the egg whites until stiff.

7Fold into the mixture and proceed baking.
