  • 2 c. fresh corn, cut off the cob or frozen corn, thawed
  • 2 Tbsp. flour
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. milk
  • 2 egg yolks, lightly beaten
  • 2 egg whites, beaten to soft peaks
  • 1 Tbsp. butter

Directions

    In mixing bowl, stir together the corn, flour, sugar, salt, pepper and milk. Fork in beaten egg yolks, then fold in beaten whites. Pour into a buttered 1-quart casserole. Dot top with butter. Bake, uncovered, in a moderate oven (350°) for about 45 to 50 minutes just until middle is set.
