- 3 Tbsp. butter
- 1/4 c. chopped onion
- 1/2 bell pepper, chopped
- 2 c. fresh corn or 2 c. drained canned corn
- 2 Tbsp. sugar
- 1 tsp. salt
- black pepper to taste
- 1/2 c. grated Cheddar cheese
- 3 eggs, beaten
Directions

1Melt butter in skillet; saute onion and bell pepper in butter until onion is done.

2Add corn, sugar, salt and black pepper and cook 15 to 20 minutes on medium-low heat.

3Cool slightly and add cheese and eggs.

4Place in a casserole dish and bake at 350° for 35 minutes.
