Ingredients

  • 3 Tbsp. butter
  • 1/4 c. chopped onion
  • 1/2 bell pepper, chopped
  • 2 c. fresh corn or 2 c. drained canned corn
  • 2 Tbsp. sugar
  • 1 tsp. salt
  • black pepper to taste
  • 1/2 c. grated Cheddar cheese
  • 3 eggs, beaten

Directions

    Melt butter in skillet; saute onion and bell pepper in butter until onion is done.

    Add corn, sugar, salt and black pepper and cook 15 to 20 minutes on medium-low heat.

    Cool slightly and add cheese and eggs.

    Place in a casserole dish and bake at 350° for 35 minutes.
