Ingredients
- 1 small chopped onion
- 1/2 c. vinegar
- 1/2 c. sugar
- 2 Tbsp. celery seed
- 1/2 tsp. mustard seed
- 1 can drained, whole kernel corn (use 16 oz. can)
- 1/4 c. sweet pickle relish
- 1/4 c. diced pimento
- 1/2 c. chopped celery
Directions

1In a medium saucepan, combine onion, vinegar, sugar, celery seed and mustard seed.

2Bring to a boil.

3Reduce heat and simmer for 10 minutes.

4In a separate bowl, combine corn, pickle relish, pimento and celery.

5Pour hot vinegar mixture over corn mixture and mix well.

6Allow to cool.

7Chill 24 hours to allow flavors to blend.

8The next day, fill small glass jars with mixture.

9Share with friends.

10Store in refrigerator.

11Keeps about 1 month.
