Ingredients

  • 10 c. fresh whole kernel corn
  • 1 small head cabbage, shredded
  • 6 medium onions, chopped
  • 4 medium green peppers, chopped
  • 2 medium sweet red peppers, chopped
  • 1 qt. cider vinegar
  • 4 c. sugar
  • 2 1/2 tsp. ground turmeric
  • 2 1/2 tsp. ground dry mustard
  • 2 tsp. celery seed
  • 2 tsp. salt

Directions

    In large Dutch oven, combine vegetables.

    Mix other ingredients together.

    Pour over vegetables.

    Bring to a boil; reduce heat and simmer for 10 minutes.

    Ladle into hot sterilized jars (1/2-inch headspace).

    Seal, process in boiling water bath 10 minutes.

    Let stand at least 1 week to blend flavors.

    Makes 14 (12 ounce) jars.
