- 4 c. cooked corn
- 2 c. shredded cabbage
- 1/2 c. chopped bell pepper
- 1/2 c. chopped onion
- 2 c. cider vinegar
- 1 c. sugar
- 1 Tbsp. dry mustard
- 1 Tbsp. salt
- 2 tsp. turmeric
- 1/2 c. water
- 1/4 c. chopped pimiento
Directions

1Combine all ingredients except pimiento into a large enamel or stainless steel pan.

2Cook over high heat and bring to a boil. Reduce heat and simmer, uncovered, 20 to 30 minutes, stirring occasionally.

3Stir in pimiento and pack into pint jars.

4Seal immediately.
