  • 1 medium onion
  • 1 celery stalk
  • 1 green bell pepper
  • 2 1/2 c. corn kernels (defrosted or drained can)
  • 1/2 c. olive oil
  • 1 Tbsp. sugar
  • 1 tsp. mustard powder
  • 1/3 c. red wine vinegar

Directions

    Peel the onion, leaving a little of the root attached, and cut it lengthwise in half.

    Lay each onion half flat on the chopping board and slice horizontally, then vertically toward the root, leaving the slices attached at the root end.

    Finally, cut across to make dice.

    Peel the strings from the celery stalk with the vegetable peeler.

    Cut the celery stalk across into thin slices.
