Corn Rice Casserole

- 1 medium onion, chopped
- 1 medium bell pepper, chopped
- 1/2 c. margarine
- 2 (16 oz.) cans cream-style corn
- 1 egg, well beaten
- 2 tsp. sugar
- 1 (4 oz.) jar chopped pimento
- 3 Tbsp. water
- 1 1/3 c. uncooked Minute rice
- 3/4 c. shredded Cheddar cheese
Directions

1Saute onion and green pepper in margarine.

2Combine onion, pepper, corn, egg, sugar, pimento and water.

3Stir in rice.

4Pour into greased casserole.

5Bake, uncovered, 20 minutes at 350°. Sprinkle cheese on top.

6Let stand until cheese melts.
