Corn Rice Casserole

  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1/2 c. margarine
  • 2 (16 oz.) cans cream-style corn
  • 1 egg, well beaten
  • 2 tsp. sugar
  • 1 (4 oz.) jar chopped pimento
  • 3 Tbsp. water
  • 1 1/3 c. uncooked Minute rice
  • 3/4 c. shredded Cheddar cheese

Directions

    Saute onion and green pepper in margarine.

    Combine onion, pepper, corn, egg, sugar, pimento and water.

    Stir in rice.

    Pour into greased casserole.

    Bake, uncovered, 20 minutes at 350°. Sprinkle cheese on top.

    Let stand until cheese melts.
